Later, after prolonged research on the subject of essential fatty acids (EFAs), scientists realized that back in the Palaeolithic age, human diets were characterized by low saturated fat, low caloric intake from fats, and almost negligible trans-fatty acids. Additionally, most foods such as meats, green plants, eggs, fish, berries and nuts consumed by the hunter-gatherer population were rich in omega-3 PUFAs, which presented a balanced omega-6/omega-3 ratio (1–2:1). These diets significantly influenced and helped in the cerebral and cognitive development of species and contributed to human evolution. But modern diets have much higher than the recommended level of caloric content in the form of fat. Moreover, these diets contain a high level of saturated fats, trans-fats, which are rich in omega-6 PUFAs but poor in omega-3 EFAs, resulting in a highly imbalanced omega-6/omega-3 ratio (15–30:1).
A high omega-6/omega-3 ratio, as is found in today’s industrial diets, promotes the pathogenesis of many diseases, including cardiovascular disease, cancer, osteoporosis, and inflammatory and autoimmune diseases.
